My First Post!

Welcome to my new blog! This is all very new for me but I love the idea of being able to share my baking and ideas with others. We all love looking through cookbooks and dreaming of baking all the beautiful things, but we're just not sure if they'll turn out.


I'm hoping my friends and family can come here and see my successes (and fails, lets be honest).

My mum is an epic baker and was always making batches of cookies for us. Most of my go-to recipes are hers. In this first post, I've done her Chocolate Chip Cookie recipe, but I've made a couple changes.


Chocolate Chip Cookies 230g butter, at room temperature 2/3 cup brown sugar 1 1/3 cup white sugar 2 eggs, at room temperature 1 tsp vanilla ½ cup wholemeal flour 2 ½ cups all-purpose flour 1 tsp baking soda 1 tsp salt 200g chocolate chips Preheat oven to 175°C. Cream the butter and sugars until pale and creamy, 2 – 3 minutes. Add the eggs one at a time, and then the vanilla. In a separate bowl, combine the flour, baking soda and salt. Gradually add to the butter/egg mixture and mix until just combined. Add the chocolate chips and gently mix until just combined. Place tablespoonfuls on baking sheets and bake for 13 – 14 minutes or until just starting to brown around the edges. Cool on pans for 10 minutes and then transfer to a wire rack. Makes: 36 cookies Tips: + Making sure your butter is at room temperature is crucial. This will create a creamy base for your cookies. + I use an ice cream scoop for uniform size cookies.
